i think perhaps it relates to his hatred of the mailman . everyday the mailman comes except for sunday. so on monday, garfield has to encounter the mailman after experiencing the bliss of a day without the mailman.
but why are you singling out garfield? f the mamas and the papas hated mondays, even thought their job was to sing and play instruments, i doubt that led to much differentiation between days either.

garfield does not like mondays because one day when he was going to school at cleveland elementary in san diego, he killed two men, wounded eight students and a police officer. his principal, burton wragg, was attempting to rescue children in the line of fire when he was shot and killed, and custodian mike suchar was slain attempting to aid wragg.

garfield used a rifle jon had given him as a gift. as to what impelled him into this form of murderous madness, he told a reporter,''I don't like Mondays. This livens up the day.''

the event inspired the popular boomtown rats song "I Don't Like Mondays" which was released in october 1979.
